Ingredients
- 3-4 cups blackberries or boysenberries, fresh or frozen
- 1 teaspoon lemon zest
- 1 cup sugar
- 2 cardamom pods, crushed
- 1/4 teaspoon cinnamon
- 2 cups whole milk yogurt
- 2 Tbsp heavy whipping cream
- 2 Tbsp brandy, optional
Directions
- Combine the blackberries, lemon zest, cardamom, cinnamon, and sugar in a saucepan. Warm the mixture until it reaches a simmer, stirring as it cooks so the berries start to collapse and give up their juice. Continue simmering for 10 minutes, then take the pan off the heat and let it cool for 15 minutes.
- Set a sieve over a bowl. Spoon the berry mixture into the sieve, then press it through so the thick syrup collects underneath. The back of a spoon or a rubber spatula works well for pushing the berries against the mesh. Throw away what is left in the sieve, and keep the syrup.
- Mix the yogurt and cream into the berry syrup until smooth. Cover the bowl with plastic wrap and refrigerate for several hours.
- Just before churning, stir in the brandy if you are using it. Freeze the mixture in your ice cream maker, following the manufacturer’s directions. You can eat it while it is still soft, or transfer it to a container and freeze for several hours until it firms up.
