Blue Cheese Biscuits

Ingredients

  • 4 ounces stilton or other strong blue cheese, at room temperature
  • 1 stick unsalted butter
  • 2 tablespoons heavy cream
  • 1 egg yolk
  • 3/4 cup all purpose flour
  • 1/2 teaspoon salt

Directions

  1. In a large bowl, beat the cheese until it is smooth. Add the butter, heavy cream, and egg yolk, and beat them into the cheese.
  2. In a small bowl, whisk the flour and salt together. Beat the flour mixture into the wet ingredients just until the dough comes together. Wrap the dough in plastic wrap and let it rest in the refrigerator for 2 hours or up to overnight.
  3. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. If the dough has chilled overnight, let it sit out for 10 minutes before rolling. On a lightly floured surface, roll the dough to 1/4 inch thickness. Cut out the biscuits with a 3-inch biscuit cutter, then move them to the prepared baking sheet.
  4. Bake for 12 minutes, until the biscuits are a little puffed and golden brown. These are thin, flaky biscuits, so don’t expect them to rise dramatically.
