Ingredients
- For the muffins:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- Pinch of salt
- 1 1/2 cups blueberries
- 2 eggs, beaten
- 2/3 cups sugar
- 1 cup milk
- 4 tablespoons melted
- 1/2 vanilla extract
- For the streusel topping:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/3 cup sugar
- 1 teaspoon grated lemon rind
Directions
- Move the oven rack to the middle of the oven, then heat it to 400 degrees F. Add the flour, baking powder, salt, and blueberries to a large mixing bowl, and whisk so the berries are coated and the dry ingredients are evenly distributed.
- Use another bowl for the eggs, sugar, milk, butter, and vanilla. Stir them together, pour this mixture into the flour mixture, and fold softly until there are no dry pockets; the batter should still be bumpy.
- For the streusel, add the butter to a small bowl along with the flour, sugar, and lemon rind. Work everything together with your fingertips until it turns into a paste.
- Prepare the muffin tin with butter, non-stick cooking spray, or muffin liners. Spoon in the batter, portioning it among the cups and filling each about 2/3 full.
- Scatter the streusel over the muffins, then bake for about 15 minutes, until a toothpick poked into a muffin comes back clean.
