Bourbon Street Banana Crisp

Ingredients

  • 9 tablespoons unsalted butter, melted, divided
  • 1/2 cup plus 3 tablespoons light brown sugar, divided
  • 7 medium bananas, ripe but not mushy, sliced 1/4-inch thick
  • 5 to 6 tablespoons bourbon
  • 1 cup all purpose flour
  • 3/4 teaspoon salt
  • 1/4 cup oats
  • 1 cup walnuts, chopped

Directions

  1. Move an oven rack to the upper middle position, then heat the oven to 375 degrees F. Add 3 tablespoons melted butter to the baking dish and tilt the dish so the butter covers the bottom. Add 3 tablespoons brown sugar over it, then spread the bananas in the dish. Pour the bourbon across the bananas and stir once or twice, just enough to get everything mingling.
  2. With your fingertips, combine the flour, salt, oats, walnuts, the remaining 1/2 cup brown sugar, and the remaining 6 tablespoons melted butter, working it together until you have damp, crumbly pieces. Sprinkle that mixture over the bananas. Bake until the top is golden and the fruit is bubbling, about 30 minutes. Serve warm, not hot.
