Ingredients
- 2 pounds lamb ribs
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth or stock
- 1/2 cup dried apricots, chopped
- Salt and freshly ground black pepper to taste
- Chopped fresh parsley for garnish, optional
Directions
- Set your oven to 350 degrees F (175 degrees C).
- Warm the olive oil in a large skillet set over medium heat. Stir in the onion and garlic, then cook them until they’ve softened, about 5 minutes.
- Sprinkle in the coriander and cumin, and let the spices cook with the onions for 1 minute longer.
- Arrange the lamb ribs in a large baking dish, then spoon the onion mixture across the ribs. Add the chicken broth or stock to the dish, season with salt and pepper to taste, and scatter the chopped apricots across the top.
- Seal the dish well with aluminum foil and transfer it to the oven for 1 hour 15 minutes, until a fork slides into the ribs easily. If you’d like the liquid a little more concentrated, remove the foil for the final 15 minutes of baking.
- Finish with chopped fresh parsley, if desired, and serve.
