Breakfast Casserole with Hash Browns, Bacon or Sausage!

Ingredients

  • 1 tablespoon olive oil
  • 1 pound diced bacon, chopped
  • 10 large eggs
  • 1 cup milk
  • 1/2 cup heavy cream, or thickened cream
  • 1 teaspoon garlic powder
  • Salt to season
  • Fresh cracked black pepper
  • 2 Roma tomatoes, seeded and chopped
  • 1 onion, diced
  • 1 green bell pepper, seeded and chopped
  • 1 cup shredded white Cheddar
  • 28 oz shredded hash browns, frozen
  • 1/2 cup shredded mozzarella cheese

Directions

  1. Preheat the oven to 350°F (175°C). Coat an 8x12-inch baking dish lightly with nonstick oil spray.
  2. Warm the oil in a large skillet or pan set over medium heat. Add the bacon or sausage meat, then cook until the bacon is crisp or the sausage is browned, about 8 minutes. If you’re using sausage, crumble it with the end of a wooden spoon as it cooks. Stir in the onion and continue cooking until it softens, about 3 minutes.
  3. In a large bowl, whisk the eggs with the milk, cream, and garlic powder. Add plenty of salt and black pepper. Stir in the cooked bacon or sausage and onions, along with the tomatoes, bell peppers, and cheddar cheese.
  4. Scatter the hash browns across the bottom of the prepared dish. Pour the egg mixture evenly over the top, then sprinkle with the mozzarella. Bake until the eggs are fully set, about 45 to 50 minutes.
  5. Serve warm with an easy to make hollandaise sauce.
