The Best Breakfast Potatoes
Parbaked russet potatoes are chilled, diced, and skillet-crisped with olive oil and herbs for an easy, savory breakfast side.

Ingredients
- 5 small Russet Potatoes )
- 1/4 cup Olive Oil
- 1 1/2 – 2 tsp Herb Seasoning )
Directions
- Heat the oven to 400 degrees. While it warms, rinse the potatoes well, scrub the skins, and poke each one several times with a fork. Bake the potatoes for 35 minutes, then take them out and let them cool for 30 minutes. Chill them overnight, or dice and cook them right away if you prefer. The chilled potatoes will usually slice more neatly.
- Cut the cold potatoes into 1/2" cubes. Add the olive oil to a large non-stick skillet and warm it over medium heat. When the oil is hot, gently add the diced potatoes. Sprinkle on the Herb Seasoning right away, then turn the potatoes with a heatproof spatula.
- Put a lid on the skillet and cook, stirring every few minutes once the undersides start to brown lightly, about 8 – 12 minutes, until the potatoes are as tender as you like them. Serve right away.
