Ingredients
- 12 cups water
- 6 tablespoons unsalted butter
- 3 shallots, minced
- 1 pound broad beans
- 1/4 cup grated parmesan cheese
- 1 large bunch dill, minced
- Lemon juice, if desired
Directions
- Fill a large pot with the water and bring it to a boil, then season it generously with salt. Add the beans and cook them until they are barely tender, about 5 minutes. Drain, then rinse them very well with cold water.
- In a large, straight-sided skillet, melt the butter over medium-low heat. Add the shallots, season generously with salt, and cook until they are deeply softened and fragrant, about 5 minutes. Add the beans, stir so they’re coated in the butter, and cook for 1 minute. Stir in the Parmesan and keep stirring until it melts.
- Take the skillet off the heat and fold in the dill. Season with salt to taste, add lemon juice if you’d like, and serve right away.
