Broiled Flat Iron Steak with Brussels Sprouts and Sweet Potatoes
Broiled flat iron steak cooks above Brussels sprouts and sweet potatoes, turning a simple sheet pan dinner savory, hearty and efficient.

- Half
- Thyme
Directions
- Heat the broiler and set the oven rack 6 inches away from the heat source.
- Put the Brussels sprouts and potato on a rimmed baking sheet. Add 1 tablespoon oil, toss to coat, then arrange them in a single, even layer. Set a wire rack inside the pan, directly over the vegetables. Coat the steak with 1 1/2 teaspoons oil, then lay it on the rack above the vegetables. Season the steak with 1 teaspoon thyme, 1/2 teaspoon salt, and half of the pepper.
- Broil for 10 minutes. Flip the steak, then spoon over the remaining 1 1/2 teaspoons oil and season with the remaining thyme, salt, and pepper. Return it to the broiler for about 5 minutes, or until it is cooked to the doneness you like.
- Transfer the steak out of the pan and rest it for 5 minutes. Slice it thinly across the grain. Move the vegetables to a bowl, add the juices from the pan, and toss until coated.
