Ingredients
- 1/2 cup pure maple syrup, preferably grade B
- 1/4 cup soy sauce
- 1 Tbs. fresh lemon juice
- Kosher salt and freshly ground black pepper
- 4 6-oz. center-cut salmon fillets, pin bones removed
Directions
- Add the maple syrup, soy sauce, and lemon juice to a 1-quart saucepan and warm it over medium-high heat until it begins to gently bubble. Turn the heat down to medium and let it cook until the mixture thickens to a syrupy glaze, 7 to 10 minutes.
- Set an oven rack 6 inches below the broiler element, then turn the broiler to high. Cover a rimmed baking sheet with foil.
- Arrange the salmon on the prepared foil with the skin side down. Season the fillets generously with salt and pepper.
- Broil the salmon for about 3 minutes, just until it starts to look opaque.
- Coat each piece well with the maple glaze, then slide it back under the broiler until the salmon is done the way you like it, 7 to 10 minutes for medium, when the center will still be dark pink. Brush on the rest of the glaze right away and serve.
