Maple Roasted Sweet Potatoes with Pecans

Ingredients

  • 3 lbs. sweet potatoes
  • 2 Tbsp butter
  • 1/4 cup brown sugar
  • 1/4 cup maple syrup
  • 1/4 tsp cinnamon
  • 1/8 tsp ground cloves
  • 1/4 tsp salt
  • 1/2 cup pecans

Directions

  1. Heat your oven to 400ºF. Peel the sweet potatoes, then cut them into 3/4 inch cubes. Add the cubes to a large casserole dish, either 11x15" or 5 quart.
  2. In a small bowl, add the butter, brown sugar, maple syrup, cinnamon, cloves, and salt. Warm it in the microwave for about 30 seconds, just long enough for the butter to melt, then mix until smooth. Drizzle the butter mixture over the sweet potatoes and toss until they are coated.
  3. Slide the casserole dish into the hot oven and roast for 20 minutes. As they cook, roughly chop the pecans. When the 20 minutes are up, scatter in the pecans, stir everything together, and return the dish to the oven for another 15-20 minutes, until the sweet potatoes are very soft and the liquid has cooked down into a sticky candy-like glaze. Serve hot.
