Brown-Butter Old Fashioned Mocktail

Ingredients

  • 2 tablespoons unsalted butter
  • 1/2 cup packed dark brown sugar
  • 1/2 cup water
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon fine sea salt
  • 2 ounces Seedlip Spice 94
  • 1/2 ounce chilled strong black tea
  • 3/4 ounce brown butter syrup
  • 1 teaspoon fresh orange juice
  • 1 large ice cube
  • 1 orange peel

Directions

  1. Set a small saucepan over medium heat and add the butter. Cook, swirling often, until it foams, smells nutty, and the milk solids turn golden brown.
  2. Carefully whisk in the water, then add the brown sugar and salt. Simmer for about one minute, just until smooth. Remove from the heat, stir in the vanilla, and chill until the butter firms on top. Lift off and discard the solid butter cap, then strain the syrup if you want it extra smooth.
  3. In a mixing glass, combine the Seedlip Spice 94, black tea, brown butter syrup, and orange juice. Add ice and stir until the glass feels cold.
  4. Place one large ice cube in a rocks glass and strain the drink over it. Twist the orange peel over the glass to release its oils, then tuck it into the drink.
