Ingredients
- 1 lb. ground turkey
- 2 tsp. olive oil, for browning turkey
- 3/4 – 1 cup thickly sliced green onion
- 1/2 large head red cabbage, thinly sliced
- 1-2 heads iceberg lettuce
- 1/3 cup crumbled blue cheese, more or less to taste
- 1/3 cup Frank's Red Hot Sauce
- 1 1/2 T olive oil
- 1 1/2 T Worcestershire sauce, gluten-free if needed
- 1T sweetener of your choice
- 1 tsp. Green Tabasco Sauce
Directions
- Warm the 2 tsp. olive oil in a nonstick frying pan. Add the ground turkey, set the heat to medium high, and use a turner to crumble the meat as it cooks. Keep going until the turkey has browned well; if liquid collects in the pan, let it bubble away.
- As the turkey is cooking, combine the Frank's Red Hot Sauce, olive oil, Worcestershire Sauce, sweetener of your choice, and Green Tabasco Sauce.
- Once the turkey is well browned, pour in the sauce mixture and stir everything together. Reduce the heat to low and cook until the meat has taken in the sauce; when you stir, the pan bottom should show.
- Cut the green onions into slices, shave the purple cabbage thinly, using a mandoline slicer if you have one, and break up the blue cheese into crumbles.
- Rinse the lettuce if it needs it, then pull the leaves apart into large cups.
- Spoon plenty of sliced cabbage into each lettuce cup, add some buffalo turkey, and finish with crumbled blue cheese.
- The buffalo turkey mixture, sliced cabbage, lettuce, and blue cheese can be refrigerated for a day or 2, but wait to build the lettuce wraps until just before eating.
- Enjoy.
