Buttermilk Waffles
Buttermilk waffles with a crisp iron-kissed edge and tender center, made extra light by folded egg whites.

Ingredients
- 1 2/3 cup all-purpose flour
- 1/3 cup cornstarch
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1 pinch cream of tartar
- 3 Tbsp granulated sugar
- 2 cups buttermilk
- 3 Tbsp vegetable oil
- 3 Tbsp melted butter
- 1 tsp vanilla extract
Directions
- Set the oven to 200 degrees, and let your electric waffle iron heat as well. In a mixing bowl, whisk the flour, cornstarch, baking powder, baking soda and salt, then put that bowl aside.
- In a separate bowl, use an electric hand mixer on moderately high speed to beat the 2 egg whites with the cream of tartar, being careful that no yolk sneaks in. When you have soft peaks, add the sugar and keep beating until the peaks are firm and shiny; set this aside too.
- In another large bowl, whisk the buttermilk, vegetable oil, melted butter, vanilla extract and 2 egg yolks until everything is blended. Add the dry mixture and whisk only until it comes together; the batter should look quite lumpy. With a rubber or silicone spatula, fold half of the egg white mixture into the waffle batter, then fold in the rest just until combined.
- Cook the batter following the instructions for your waffle iron. As each waffle finishes, move it right away to a wire cooling rack, then place the rack in the preheated oven so it can rest while you make the remaining waffles. Serve immediately with maple syrup or another topping you like.
