Cajun Cabbage and Noodles

Ingredients

  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp cayenne pepper
  • 1/4 tsp salt
  • Freshly cracked pepper
  • 1 Tbsp cooking oil
  • 13 oz. smoked sausage
  • 6 cups shredded cabbage
  • 1/4 cup water
  • 8 oz. wide egg noodles
  • 2 Tbsp butter, or more to taste
  • 2 green onions, sliced
  • Hot sauce to taste

Directions

  1. Mix the Cajun spices together in a bowl and put them to the side. Shred the cabbage finely.
  2. Pour the cooking oil into a large pot set over medium heat. Cut the smoked sausage into slices, then add it to the pot. Cook, stirring as needed, until the sausage has taken on plenty of color.
  3. As the sausage browns, get a separate pot of water heating for the egg noodles. When the water reaches a boil, add the noodles and cook them until tender. Drain them well in a colander.
  4. Add the shredded cabbage to the sausage pot, along with the Cajun spice mix and water. Stir everything together, then cover the pot. Cook over medium heat with the lid on, stirring now and then, for about 5-7 minutes, until the cabbage has softened and wilted.
  5. When the cabbage is ready, stir in the drained egg noodles and butter. Toss until the butter melts and coats the cabbage and noodles. Taste, then add more salt if it needs it.
  6. Right before serving, finish each bowl with sliced green onions and a splash of hot sauce.
