Ingredients
- 4 oz. lo mein noodles
- 2 Tbsp butter
- 1/4 tsp crushed red pepper
- 1 large egg
- 1 Tbsp brown sugar
- 1 Tbsp soy sauce
- 1 Tbsp sriracha rooster sauce
- 1 handful fresh cilantro
- 1 sliced green onion
Directions
- Start a pot of water for the noodles. When it comes to a full, rolling boil, drop in the noodles and follow the package timing, which should be a 5-7 minute boil.
- As the water heats, make the sauce. Stir the brown sugar, soy sauce, and sriracha together in a small bowl until combined.
- Set a large skillet over medium-low heat and melt 2 tablespoons of butter. As the butter softens and melts, add the red pepper. Beat the egg in a bowl, then pour it into the melted butter. Stir it gently until it is cooked through, then shut off the heat.
- Once the noodles are tender, drain them and transfer them to the skillet with the cooked egg. Pour in the sauce as well. Set the heat to low so any extra moisture can cook off, stirring until the noodles are nicely coated. Scatter the sliced green onions and whole cilantro leaves over the top, then serve.
