Cajun Shrimp and Rice
A quick Cajun shrimp skillet with rice, tomatoes, peppers, green onions and thyme for a bold, hearty dinner with very little fuss.

Directions
- Prepare the rice as the package instructs, but leave out the salt and fat.
- As the rice is cooking, warm 1 tablespoon oil in a large nonstick skillet set over medium-high heat. Dust the shrimp with Cajun seasoning and toss until evenly coated. Put the shrimp in the skillet and cook for 4 minutes, or until cooked through. Transfer them out of the pan and keep them warm.
- Add 1 tablespoon oil to the same skillet over medium-high heat. Stir in the garlic and cook for 30 seconds. Add the pepper stir-fry, green onions, and thyme, then cook for 3 minutes, or until tender. Mix in the cooked rice, shrimp, tomatoes, salt, and pepper, and cook for 1 minute, or until everything is hot throughout.
