Ingredients
- 10 Tbsp unsalted butter, softened
- 3/4 C light brown sugar
- 1/2 C granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 C cake flour
- 1/2 C bread flour
- 1/4 C white cake mix
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3 Tbsp rainbow sprinkles
- 1 1/2 C semi-sweet chocolate chips
Directions
- In a stand mixer bowl, beat the butter with both sugars until creamy. Add the egg and vanilla and mix only until they are worked through. Add the cake flour, bread flour, cake mix, salt, baking soda and baking powder, raising the mixer to medium if the dough needs a little help coming together. Stir in the sprinkles and chocolate chips by hand with a wooden spoon. Cover the dough and refrigerate it for 2-4 hours, until it is slightly chilled.
- Heat the oven to 350°F. Line your baking sheets with parchment paper. Scoop the dough with a medium cookie scoop, then roll or press each portion into a ball. Arrange the dough balls on the prepared baking sheets, leaving at least 2 inches between them.
- Bake for 12-14 minutes, until the edges are just lightly golden. Leave the cookies on the pan for 2 minutes, then move them to a cookie sheet to cool completely. Store in an airtight container.
