Caramelized Banana and Peanut Butter Quesadilla

Ingredients

  • 1 ripe banana
  • 1 small flour tortilla
  • 1 Tbsp peanut butter
  • 1/2 Tbsp butter
  • 1/2 Tbsp brown sugar
  • Dash of cinnamon

Directions

  1. Cut the banana into slices. Warm the butter in a small skillet set over medium heat. When it has melted, add the banana slices and brown sugar. Cook until the banana pieces are golden brown and a little glossy-sticky, then take the skillet off the heat.
  2. Spread the peanut butter across one half of the tortilla. Spoon the caramelized banana over the peanut butter, then add a dash of cinnamon. Fold the plain half of the tortilla over the filling.
  3. Set the quesadilla in a clean, dry skillet over medium heat. Cook it until both sides are crisp and golden brown. Cut it into triangles with a large knife or pizza cutter, then serve.
