Ingredients
- 2 Tbsp butter, room temperature
- 1 Tbsp olive oil
- 2 cloves garlic, minced
- 1/8 tsp paprika
- 1/8 tsp salt
- 1 Tbsp finely chopped parsley
- 8 oz. cod
- 1 fresh lemon
Directions
- Heat your oven to 400ºF. In a small bowl, mix the butter, olive oil, garlic, paprika, salt, and parsley until you have a mostly smooth, spreadable paste.
- Use a little of the garlic butter to grease a small baking dish so the cod does not cling to it. Set the cod filets in the dish, then rub the rest of the garlic butter over every side of the fish.
- Cut half of the lemon into slices and tuck those into the baking dish with the cod. Slice the remaining 1/2 lemon into wedges to use at the table.
- Bake the cod for 20 minutes, until a fork pulls it apart easily and the center registers 145ºF. Drizzle the juices from the pan back over the fish, then serve right away with the fresh lemon wedges for squeezing over the top.
