Ingredients
- 6 slices bacon, cooked and crumbled or chopped it bits
- 2 lbs russet potatoes, scrubbed and rinsed, cut into 3/4-inch cubes, about 7 cups
- 2 1/2 Tbsp olive oil
- 1/2 tsp sea salt, more to taste if desired
- 1/2 tsp freshly ground black pepper
- 4 oz medium or sharp cheddar cheese, shredded, use 2% if desired
- Light ranch dressing
- 2 green onions, chopped
Directions
Heat the oven to 400 degrees. Coat a rimmed baking sheet using non-stick cooking spray. Add the potatoes to a large mixing bowl, pour in the olive oil, sprinkle with salt and pepper, and toss until everything is evenly coated. Transfer the potatoes to the prepared sheet and spread them out. Bake for 20 minutes, take the pan out, and turn the potatoes. Put the pan back in the oven for another 20 minutes, then remove it and toss again. Return the potatoes to the oven and continue baking until they are golden with crisp edges, about 15 minutes longer. Scoot the potatoes toward the middle so they sit closer together, scatter the cheddar evenly over the top, and bake several minutes longer, just until the cheese melts. Take the pan out of the oven, drizzle with ranch dressing, and add the bacon and green onions over the top. Serve immediately.
