Prep 10 min · Cook 25 min · Total 35 min · Makes 12 popovers

Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 2 tablespoons chopped fresh herbs
- 2 large eggs
- 1 cup whole milk
- 4 tablespoons unsalted butter, melted and cooled slightly
- 1 cup grated sharp cheddar cheese
Directions
- Set the oven to 375°F (190°C). Coat a 12-cup muffin tin with butter or cooking spray so the popovers release easily.
- Place the cheese, butter, milk, eggs, herbs, and salt in a medium bowl, then whisk everything together until the mixture looks even.
- Tip in the flour and stir only until it disappears into the batter. Stop while the mixture is still a bit lumpy, since smoothing it out too much will work against you.
- Spoon the batter into the prepared muffin cups, sharing it out evenly. Bake for 25 minutes, until the popovers are puffed and nicely golden. Serve them warm or at room temperature.
