Ingredients
- 2/3 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons matcha green tea powder
- 3 large eggs, room temperature
- 1/2 cup granulated sugar
- 2 tablespoons butter, melted and cooled slightly
- 1 teaspoon vanilla extract
Directions
- Put the matcha powder in a small bowl, then add the water and stir until the mixture is smooth.
- Set a sheet pan beside the cooktop where you’ll be cooking the cookies. Add the powdered sugar to the pan, making a 6" to 8" mound.
- Crack the eggs into a mixing bowl, add the sugar, and use an electric mixer to beat them together just until combined.
- Add the flour and beat again until incorporated.
- Pour in the butter and beat until the batter is well mixed.
- Add the dissolved matcha and beat until everything is evenly blended.
- Warm a krumkake iron over medium heat. Spoon 1 teaspoonful of batter onto the iron, then cook it for 1 minute per side.
- Remove the cookie from the iron and roll it through the powdered sugar.
