Chicken, Broccoli, and Brown Rice Casserole
A broiled skillet casserole with chicken, broccoli, brown rice, mushrooms, and a creamy sauce finished with melted cheese.

Directions
- Set the broiler to high. Prepare the rice as the package directs, then drain it.
- As the rice cooks, warm a large 12-inch ovenproof skillet over medium-high heat. Pour in the oil and tilt the pan so it coats the surface. Add the onion, mushrooms, and chicken, then season with 1/4 teaspoon salt and pepper. Sauté for 6 minutes, until the chicken is cooked through and the onion is tender.
- Microwave the broccoli according to the package directions for 3 minutes. Carefully open the package so the steam can escape.
- In a separate bowl, whisk the milk and flour with a whisk or fork until the mixture is smooth.
- Pour the milk mixture into the skillet with the chicken mixture and stir it in.
- Cook for 2 minutes, stirring often, until the sauce bubbles and thickens.
- Add the remaining 1/2 teaspoon salt, the rice, and the broccoli, and stir to combine. Scatter the cheese over the top.
- Slide the skillet under the broiler for 1 minute, just until the cheese is melted and starting to brown.
- Variation: Use ground beef instead of the chicken.
- Variation: If broccoli is not your thing, swap in cauliflower, spinach, green peas, carrots, or green beans.
- Variation: Instead of rice, use 3 cups cooked quinoa from 1 cup uncooked.
