Chili Lime Pork Loin

Ingredients

  • 2 lb. pork loin filet
  • 1 Tbsp chili powder
  • 1 medium lime
  • 4 Tbsp vegetable oil, divided
  • 1/2 Tbsp minced garlic
  • 1 Tbsp soy sauce

Directions

  1. In a small bowl, whisk 2 Tbsp. vegetable oil with the soy sauce, chili powder, lime juice, and garlic. For easier juicing, warm the lime in the microwave for about 20 seconds before you cut into it.
  2. Drop the pork loin into a large zip top bag, then add the marinade. Massage the bag so the pork is coated all over, and refrigerate it for 1 hour or more.
  3. When you're ready to cook, pull the pork loin from the refrigerator. Preheat the oven to 400 degrees. Set a large skillet over medium-high heat and add the remaining 2 Tbsp. vegetable oil. Once the pan is very hot and the oil shimmers across the top, put in the pork loin, saving the marinade. Brown the pork on both sides until the exterior is crisp and deeply colored, about 3-5 minutes each side.
  4. Once both sides are seared, transfer the pork loin to a baking sheet or roasting pan. Brush it with the reserved marinade, then move it to the oven. Roast for approximately 30 minutes, or until the pork reaches an internal temperature of 160 degrees. Rest the pork for 5 minutes before you slice it.
