Chocolate Buttermilk Pudding

Ingredients

  • 1/4 cup cornstarch
  • 1/3 cup sugar
  • 2 tablespoons light brown sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 1/2 cups whole milk
  • 1 1/2 cups buttermilk
  • 4 ounces 72% cacao chocolate, melted in a double boiler or microwave
  • 2 teaspoons vanilla extract

Directions

Add the cornstarch, both sugars, cocoa powder, and salt to a small saucepan, and whisk until the dry ingredients are evenly mixed. Pour in the milks and whisk until everything is fully blended. Set the pan over medium heat and bring the mixture to a gentle boil, whisking the whole time. Once the pudding is as thick as you want it, usually after a couple more minutes, take it off the heat and immediately transfer it to a medium bowl. Quickly whisk in the melted chocolate and vanilla. Serve it warm, if you like, or press waxed paper or plastic wrap onto the surface to keep a pudding skin from forming, then refrigerate until you are ready to serve. The pudding will firm up more as it chills.
