Ingredients
- 3 cups powdered sugar
- 3/4 cup unsweetened cocoa powder
- 1 Tbsp cornstarch
- 1/4 tsp salt
- 1/2 tsp cayenne pepper
- 2 large egg whites
- 1 large whole egg
- 1 tsp vanilla extract
- 1 cup chocolate chips
Directions
- Heat the oven to 350 degrees. In a large bowl, mix the powdered sugar, cocoa powder, cornstarch, salt, and cayenne pepper until the dry ingredients look uniform.
- Add the egg whites, whole egg, and vanilla extract to the bowl with the powdered sugar mixture. Stir gently at first, then keep working until the sugar disappears into the eggs and the batter turns very thick. It may look too dry in the beginning, but keep going and it will come together. The batter will be stiff, so reach for a sturdy spoon. Fold in the chocolate chips until they are evenly mixed through.
- Cover 2 baking sheets with parchment paper. Drop the batter onto the sheets in portions of 1 heaping tablespoon. Leave a couple inches of space around each cookie since they will spread as they bake. Aim for 10 cookies on each sheet.
- Bake 1 cookie sheet at a time for 14 minutes, until the cookies have puffed and the tops are cracked. Let the cookies cool before lifting them off the parchment.
