Ingredients
- 2 eggs
- 1 cup + 2 T Golden Monkfruit Sweetener
- 1 tsp. baking powder
- 1 tsp. vanilla
- 1/4 tsp. kosher salt
- 3 T cocoa powder
- 3/4 cup blanched almond flour
- 1 cup natural peanut butter without added sugar, softened at room temperature
Directions
- Heat the oven to 350F/170C, and cover a large baking sheet with parchment paper. Pull the peanut butter from the refrigerator so it can soften to room temperature before you mix the dough.
- Use a stand mixer or a hand mixer for the batter. Add the eggs, Golden Monkfruit Sweetener or your preferred sweetener, baking powder, vanilla, and salt to the mixing bowl, then beat until everything comes together.
- Mix in the almond flour and cocoa powder, beating until they are fully worked into the mixture.
- Add the room-temperature peanut butter and beat again until the dough is evenly combined. Chunky peanut butter is fine here, but smooth peanut butter will give the cookies a more uniform look.
- Scoop the dough with a tablespoon measuring spoon, shape each portion into a small ball, and set the balls on the parchment-lined baking sheet.
- Flatten each cookie with a fork until it is about 1/2 inch thick.
- Bake for 16-18 minutes, until the tops feel slightly firm and the cookies appear baked through. Cool them for a few minutes on the baking sheet; they will continue to firm up as they cool.
