Ingredients
- 1 1/3 cups all-purpose flour
- 1 tsp cornstarch
- 1/4 + 1/8 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter
- 1/2 cup packed light-brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 1/2 tsp vanilla extract
- 2/3 cup mini semi-sweet chocolate chips, plus more for topping if desired
Directions
- Heat the oven to 350 degrees. In a mixing bowl, whisk the flour, cornstarch, baking soda and salt for 20 seconds, then put the bowl aside.
- Put the butter in a microwave safe bowl and microwave on HIGH until it is halfway melted. Take it out and whisk until the remaining butter melts, then pour it into the bowl of an electric stand mixer.
- Add the brown sugar and granulated sugar to the butter. Attach the paddle and beat on medium speed until the mixture is evenly blended. Mix in the egg and vanilla extract.
- Turn the mixer to low and gradually add the dry mixture, mixing just until everything comes together. Stir in the chocolate chips.
- Portion the dough in slightly heaping 1/2 tsp scoops and set them on plates or wax paper. Roll each portion into a ball, then, if you want, press 3 – 4 extra chocolate chips on top for looks and more chocolate.
- Arrange the dough balls on 2 baking sheets lined with Silpat or parchment paper, leaving 1-inch between them. Bake for about 5 – 6 minutes; they should still feel soft and a little under-baked, since they will set a bit more after they come out, so take care not to over-bake.
- Remove the baking sheets from the oven and let the cookies cool on the sheets for several minutes. Move them to a wire rack to finish cooling, then store in an airtight container.
