Chocolate Pumpkin Pancakes

Ingredients

  • 1 cup pumpkin puree
  • 1 large egg
  • 2 tablespoons melted butter
  • 2 cups all-purpose flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 tablespoons cocoa powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 2 cups chocolate milk
  • Chocolate chips, garnish
  • Chocolate syrup, garnish
  • Whipped cream, garnish

Directions

  1. In a medium bowl, whisk the pumpkin puree, egg, and melted butter until they’re smooth and friendly with each other.
  2. Grab a smaller bowl and whisk together the flour, baking powder, baking soda, cocoa powder, and spices. Add that dry mixture to the pumpkin mixture, then pour in the chocolate milk. Stir just until everything comes together; the batter should be thick, but still pourable. If it’s too heavy to pour, loosen it with more chocolate milk, adding it by the 1/4 cup.
  3. Set a greased or buttered griddle over medium-low heat, then spoon on 1/3 cup of batter for each pancake.
  4. Let the pancakes cook for 2-3 minutes on the first side, until bubbles appear and the edges begin to set. Flip them over and cook the other side for another 2 minutes.
  5. Take the pancakes off the griddle and, if you want, press them into shapes with a cookie cutter.
  6. Finish them with chocolate syrup, chocolate chips, and a little whipped cream, if you’re in the mood. Enjoy with a glass of real milk!
