Chunky Fruit and Nut Quick Bread
A hearty quick bread folded with fruit and nuts, baked until golden, and made for slicing thick and toasting with butter.

Ingredients
- Salt
- Butter
- Eggs
- Baking powder
- Milk
- Baking soda
- Egg
- Flour
- Buttermilk
- Cooking spray
Directions
- Heat the oven to 350F. Coat a standard loaf pan with cooking spray. If you want the loaf to come out especially neatly, you can add a parchment liner for lifting it from the pan after baking, but it is not required.
- In a large bowl, beat together the eggs, extract, syrup and buttermilk until the mixture is smooth and combined.
- In a separate bowl, whisk the flours with the salt, baking soda, and baking powder.
- Add the fruits and nuts to the dry mixture, then combine that with the wet mixture. Stir thoroughly. The batter should be firm; if it feels overly tight, work in a little more buttermilk.
- Transfer the dough to the prepared pan and level the top. Bake for about 45-50 minutes, until the loaf is browned on top and a toothpick inserted into it comes out clean.
- This bread is especially good toasted and spread with butter. Once the loaf has cooled, wrap it well in plastic.
