Ingredients
- 3 cups rolled oats
- 1 cup slivered almonds
- 1 cup shredded sweetened coconut
- 1/3 cup packed light-brown sugar
- 1/3 cup honey
- 1/4 cup coconut oil
- 1/2 tsp salt
- 3/4 tsp coconut extract
Directions
- Heat your oven to 250 degrees. In a roomy bowl, give the oats, almonds, and coconut a quick toss, then set the bowl aside.
- In another large microwave-safe bowl, add the brown sugar, honey, coconut oil, and salt. Microwave on HIGH for 1 minute, stopping midway through to stir.
- Stir in the coconut extract. Pour the warm mixture over the oats, then keep tossing until everything is coated; it may seem dry at first, but stay with it.
- Line a rimmed cookie sheet with a silicone baking mat or parchment paper, then spread the oat mixture over it in one even layer. Bake in the heated oven until the granola is golden brown, about 45 – 55 minutes, stirring every 15 minutes.
- Pull the pan from the oven and let the granola cool completely; it will firm up as it cools. Store in an airtight container.
