Ingredients
- 2 tablespoons peanut oil, canola oil, or rice bran oil
- 1 Serrano chile, sliced into thin rings
- 1-2 garlic cloves, sliced thinly
- 1 pound shrimp, peeled and deveined
- Salt
- 1/4 cup chopped cilantro
- 1-2 tablespoons lime juice
Directions
- Set a large sauté pan or wok on high over your most powerful burner. Give the pan 1 minute to get hot, then pour in the oil. Warm the oil until it ripples and shines; if you see smoke, pull the pan away from the heat briefly.
- Scatter in the chile slices and turn them through the oil. Cook for 30 seconds.
- Add the shrimp and garlic, then season with salt. Toss everything so the oil coats the shrimp, then leave them alone for 1 minute to pick up a little color. Toss again and stir-fry until the shrimp are cooked through, about 2-3 minutes.
- Take the pan off the heat and fold in the cilantro, followed by the lime juice.
- Serve the shrimp hot or at room temperature, either on their own, over rice, or tucked into a warmed flour or corn tortilla.
