Cinnamon Apple Butter Bread

Ingredients

  • 1/2 C unsalted butter, softened
  • 1/2 C granulated sugar
  • 1/2 C light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/4 tsp all spice
  • 1/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1 C cinnamon apple butter
  • 1/3 C sour cream
  • 2 C all purpose flour

Directions

  1. Heat the oven to 350°F. Coat a 10-inch loaf pan lightly with baking spray, then add parchment so it hangs over 2 sides.
  2. In a large bowl, or in a stand mixer fitted with the paddle attachment, beat the butter with both sugars until creamy. Add the eggs and vanilla, mixing them in well and stopping to scrape down the bowl when you need to. Stir in the baking soda, baking powder, salt and spices. Add the apple butter, sour cream and flour in alternating additions, making sure the flour goes in last. Mix just until everything is incorporated and the batter looks uniform.
  3. Pour the batter carefully into the prepared loaf pan, then smooth the top into an even layer.
  4. Bake for 55-60 minutes, until a toothpick poked into the middle comes out clean or shows only a few damp crumbs.
  5. Leave the loaf in the pan for at least 5-10 minutes, or until you can handle it comfortably. Slide an offset spatula or a thin knife around the sides where the bread touches the pan. Use the parchment overhang to lift the loaf up and out, then transfer it to a wire rack to cool fully before slicing.
  6. Store the sliced apple butter bread in a large sealable bag or another airtight container for several days.
