Cinnamon Pecan Granola

Ingredients

  • Salt
  • Sugar
  • Brown sugar
  • Honey
  • Cinnamon
  • Ground
  • Vanilla
  • Rolled oats
  • Can
  • Half
  • Raisins
  • Pecans

Directions

  1. Heat the oven to 325 degrees. In a large bowl, mix the rolled oats, ground flaxseed, and roughly chopped pecans until they are evenly mingled.
  2. In a small saucepan, add the honey, brown sugar, oil, salt, and cinnamon. Warm it over low heat, stirring as you go, until the brown sugar has melted into the mixture. Take the pan off the heat, then mix in the vanilla.
  3. Pour the warm honey mixture onto the oats and pecans. Stir thoroughly, giving it a couple minutes if needed, until the oats are all coated. Transfer everything to a parchment-lined baking sheet and smooth it into an even layer.
  4. Bake the granola for 30 minutes, giving it a stir halfway through. Watch it near the end, because ovens have their own personalities. If you catch any burned smell, pull it out right away; you’re looking for toasted, not scorched.
  5. Take the granola out of the oven and mix in the raisins. Press it down on the baking sheet so it is compacted, which helps it clump as it cools. It will still seem soft while warm, then firm into a crisp, crunchy texture as it cools. Once cool, transfer it to an air-tight container.
