Ingredients
- 1 bottle Zico Coconut Water
- 1 1/4 cups light canned coconut milk, plus more for serving if desired
- 2 cups rolled oats
- 1/4 tsp fine sea salt
- 1/4 tsp coconut extract or vanilla extract
- 1 1/2 Tbsp honey, brown sugar or coconut sugar, or to taste
- 2/3 cup toasted unsweetened or sweetened flaked coconut
- 3/4 cup fresh blueberries
- 1/3 cup chopped almonds, optional
Directions
- Set the coconut water and coconut milk in a pot over the heat, then stir in the oats and salt and bring everything to a boil. Drop the heat to low and cook at a gentle simmer for 5 minutes, stirring here and there so the oats stay smooth.
- Take the pot off the burner and mix in the coconut extract and sugar. If you want a looser bowl of oatmeal, stir in water or additional coconut milk. Give it 2 minutes to cool and settle.
- Spoon the oatmeal into individual bowls. If you like, finish each bowl with another 2 Tbsp coconut milk, then scatter coconut flakes, blueberries and almonds over the top.
