Ingredients
- 1 1/2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 8 tablespoons unsalted butter, melted
- 1 cup sugar
- 2/3 cup whole Greek yogurt
- 2 eggs
- 1 teaspoon zest and 1 tablespoon juice
- 3/4 cup sweetened coconut flakes
Directions
- Set the oven rack in the center, then heat the oven to 350 degrees F. Add paper liners to 12 muffin cups. In a medium bowl, whisk the flour, baking powder, baking soda, plus salt until the mixture is even, then set it aside.
- In a large bowl, use an electric beater to blend the butter with the sugar. Beat in the yogurt, eggs, zest, and juice next. Add the dry mixture, switch to a wooden spoon, and stir until the batter is evenly mixed.
- Spoon the batter into the prepared muffin cups, filling them 2/3 full. Sprinkle coconut over each one. Bake for about 20 minutes, until a tester poked into the center of a muffin comes out mostly clean. Let the muffins cool for 5 minutes, then move them to a wire rack to cool completely.
