Ingredients
- 1 3/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 9 tablespoons cold unsalted butter, cut into cubes
- 2 tablespoons lightly packed zest from 2 limes
- 1 large egg
- 5 tablespoons buttermilk
Directions
- Set a rack in the middle of the oven and heat it to 375 degrees F. Cover a baking sheet with parchment paper. In a large bowl, combine the flour, sugar, baking powder, salt, baking soda, and butter. Work the butter in with a pastry cutter until most of the pieces are no bigger than tiny peas.
- Add the lime zest, egg, and buttermilk to the bowl. Mix with a spoon, then use your hands to bring the dough together; it may seem a little stubborn and dry at first, but it will cooperate.
- Turn the dough out onto a lightly floured board and press it into a 7-inch disc. Slice it into 6 wedges, then arrange them with space between each one on the prepared pan. Bake for 18 to 22 minutes, until the scones are set and the edges are golden. Move them to a wire rack to cool.
