Cold Soba Noodles with Vietnamese Pork
Cold soba noodles tossed with cabbage, bell pepper and a punchy fish sauce dressing, topped with quick-cooked marinated pork.

- Pepper
- Bell pepper
- Onion
- Sesame oil
- Fish sauce
- Onions
- Cooking spray
Directions
- In a large zip-top plastic bag, add 1 tablespoon onions, 1 tablespoon sesame oil, 1 teaspoon fish sauce, and the next 4 ingredients, through pork. Close the bag and refrigerate for 20 minutes to marinate.
- Prepare the noodles as the package directs, leaving out any salt and fat. Drain them well.
- In a large bowl, whisk together the remaining 1 tablespoon oil, the remaining 1 tablespoon fish sauce, vinegar, and chile paste until blended. Add the noodles, cabbage, and bell pepper, then toss until everything is coated.
- Warm a skillet over medium-high heat, then mist it with cooking spray. Take the pork out of the marinade and add it to the pan. Cook for 1 1/2 minutes, or until cooked through. Spoon the pork over the noodle mixture and finish with the remaining 2 tablespoons onions.
