Corn Flake Cookies
Crunchy no-bake peanut butter cookies mix cornflakes and kettle chips into a glossy sweet-salty bite that sets right on the counter.

Ingredients
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 1 tsp vanilla extract
- 4 cups cornflakes cereal
- 2 cups crushed Kettle Potato Chips*
Directions
- Set out 2 baking sheets and cover them with parchment or wax paper; if you prefer, stretch a long piece across the counter instead.
- Combine the sugar and corn syrup in a large saucepan. Warm the mixture over medium-high heat, stirring now and then, until it just reaches a boil.
- Take the pan off the heat right away, then mix in the peanut butter and vanilla until smooth.
- Pour in the cornflakes and potato chips, and gently turn everything together until the crunchy bits are thoroughly coated.
- While the mixture is still warm, portion it into rounded spoonfuls with two spoons or a cookie scoop, placing each mound on the prepared surface.
- Leave the cookies at room temperature until they are set. Transfer them to an airtight container for storage.
