Corn Flake Crumbles

Ingredients

  • 3/4 cup corn flakes, crushed
  • 1/2 cup old fashioned or rolled oats
  • 3/4 cup flour
  • 1/3 cup packed light brown sugar
  • 1/2 teaspoon baking powder
  • 6 tablespoons unsalted butter, chilled, cut into 1/2- to 1/4-inch dice
  • 6 tablespoons fruit preserves

Directions

  1. Move the oven rack to the middle position, then heat the oven to 350 degrees F. Grease 6 muffin cups.
  2. In a large bowl, stir the corn flakes, oats, flour, brown sugar, and baking powder together until everything is evenly mixed. Add the butter and work it in with your fingers until the dough looks like wet sand.
  3. Spoon the corn flake mixture into the muffin cups until each is halfway full, then press it down with your fingers. Add 1 tablespoon of fruit preserves to each cup, cover with the remaining cornflake mixture, and press the tops gently to even them out. Bake until the crumbles are golden brown, about 20 minutes. Cool completely, then remove them from the pan and serve.
