Cranberry Orange Mustard

Ingredients

  • 1 cup apple cider vinegar
  • 2/3 cup mustard seeds
  • 2 3/4 cups fresh cranberries
  • 2 tablespoons freshly squeezed orange juice
  • Freshly grated zest of one small orange
  • 3/4 cup granulated sugar
  • 1/4 cup dry mustard
  • 1 teaspoon allspice

Directions

  1. Set 7 4-ounce jars on a rack inside a large pot. Pour in enough water to fully cover the jars, then bring the water to a boil over high heat. Boil the jars for 10 minutes, switch off the heat, and leave them sitting in the hot water. While that happens, place the rims and lids in a small saucepan and cover them with water. Warm them over medium heat just until the water simmers, then take the pan off the heat and let the rims and lids stay in the hot water.
  2. In a small pot, bring the vinegar to a boil over high heat. Take the pot off the heat, stir in the mustard seeds, cover it, and let the mixture sit until the seeds have taken in most of the liquid, about 1 hour.
  3. Scrape the mustard seeds, along with any liquid left in the pot, into a blender. Add 1 cup water and blend until the mixture is mostly smooth and the seeds are largely broken up. Add the cranberries and blend until they are chopped, pausing as needed to scrape down the sides and stir everything together.
  4. Pour the blender mixture into a large pot. Stir in the orange juice and orange zest, then bring the mixture to a boil. Add the sugar, dry mustard, and allspice. Keep boiling, stirring the whole time, until the mustard thickens and cooks down slightly, about 12 minutes.
  5. Spoon the hot mustard into the hot sterilized jars, leaving 1/4-inch headspace. Clean the jar rims, add the lids, and twist on the bands until they are only just snug. Put the jars back on the rack in the pot and cover them completely with water. Cover the pot and bring the water to a boil over high heat. Boil for 10 minutes. Turn off the heat, remove the cover, and let the jars sit in the water for 5 minutes. Lift the jars out of the pot and leave them undisturbed on the countertop for 6 hours or overnight.
