Ingredients
- 2 cups all-purpose flour
- 8 Tbsp granulated sugar, divided
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 8 Tbsp unsalted butter, frozen
- 1/3 cup sour cream
- 1/3 cup + 1 Tbsp heavy cream, divided
- 1 large egg
- 1 tsp vanilla extract
- 1 Tbsp orange zest
- 1 cup fresh cranberries, diced into halves
- 1 cup powdered sugar
- 2 Tbsp heavy cream
- 1 Tbsp milk
- 1/2 tsp vanilla extract
Directions
- Heat the oven to 400 degrees. In a mixing bowl, combine the flour, 6 Tbsp granulated sugar, baking powder, baking soda, and salt, whisking for 20 seconds to evenly distribute everything. Grate the butter into the bowl, then use a pastry cutter or a fork with long tines to work it through the flour mixture until the pieces look like a rough, pebbly meal. Create an indentation in the middle.
- In a separate small bowl, whisk the sour cream, 1/3 cup cream, egg, vanilla, and orange zest until smooth and combined. Add this mixture to the indentation in the dry ingredients, then fold with a rubber spatula until the dough begins forming big, shaggy clumps.
- In a small bowl, coat the cranberries with the remaining 2 Tbsp granulated sugar, then add them to the dough. Use your hands to gently knead the mixture, either right in the bowl or on the counter, about 5 times, stopping as soon as it holds together.
- Lightly flour a clean work surface, then turn the dough out onto it. Pat and shape it carefully into an 8-inch round. Slice the round into 8 wedges, then move them to a baking sheet lined with a Silpat or parchment paper. Brush the tops with the remaining 1 Tbsp cream. Bake in the heated oven until the scones are golden, about 16 – 18 minutes.
- Move the scones to a wire rack to cool. Drizzle with Vanilla Cream Glaze, then leave them at room temperature until the glaze sets. Store in an airtight container. These are best served the day prepared.
- For the glaze: In a mixing bowl, whisk all glaze ingredients together until smooth and fully combined.
