Creamy Chocolate Banana Dream Pie

Ingredients

  • 2 tablespoons granulated sugar
  • 4 teaspoons cornstarch
  • 3 large egg yolks
  • 1 cup whole milk
  • 10 ounces 70% bittersweet chocolate, finely chopped
  • 1 teaspoon vanilla extract
  • 1 box chocolate wafers, ground
  • 8 tablespoons unsalted butter, melted
  • 4 bananas, sliced, divided
  • 2 cups heavy cream, well chilled

Directions

  1. In a medium bowl, whisk together the sugar and cornstarch, then add the yolks and whisk until the mixture is smooth. Warm the milk in a medium saucepan over medium heat until scalding. Slowly whisk the hot milk into the yolk mixture, then pour everything back into the pan. Set it over low heat and cook, stirring, until it thickens and barely starts to boil. Take the pan off the heat and stir in the chocolate until it has melted completely. Mix in the vanilla, then chill the chocolate mixture until cold, about an hour.
  2. As the chocolate mixture cools, prepare the crust. Combine the chocolate crumbs and melted butter, stirring until the crumbs are evenly dampened. Press the mixture firmly across the base and up the sides of the pie plate. Arrange 2 bananas over the crust.
  3. Beat the cream on high speed until it holds a soft peak. Gently fold it into the cold chocolate mixture, then spoon the filling into the pie shell. Refrigerate the pie until it is set, about 2 hours. Slice the remaining bananas, use them to garnish the pie, and serve.
