Ingredients
- 1 large spaghetti squash
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 3 cloves garlic, minced
- 1/4 cup diced onion
- 1 package frozen chopped spinach, thawed and drained
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
Directions
- Begin with the spaghetti squash already cooked and shredded.
- Set your oven for 375 degrees F (190 degrees C).
- In a roomy bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, spinach, onion, garlic, garlic powder, salt and pepper until the filling looks evenly mixed.
- Set a skillet over medium heat and warm the olive oil. Tumble in the spaghetti squash, then cook it for 5 minutes, just until it picks up a little browning.
- Spoon the squash into a 9x13 inch baking dish. Cover it evenly with the cheese mixture.
- Slide the dish into the hot oven and bake for 25 minutes, until the cheese has melted and is bubbling. Serve warm.
