Ingredients
- 1 can chickpeas, drained and rinsed
- 1 tablespoon canola or vegetable oil
- 2 teaspoons fresh thyme, minced
- 1 teaspoon za'atar seasoning
- 1/2 teaspoon sea salt
- 1/4 teaspoon cracked black pepper
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne
- 1 teaspoon Herbs de Provence
- 1/4 teaspoon freshly cracked black pepper
- 1 teaspoon lemon zest
- 1 teaspoon finely grated Parmesan or Pecorino Romano cheese
- 1 teaspoon Italian seasoning or equal parts oregano, thyme, basil, and marjoram
Directions
- Heat the air fryer to 390 degrees F for 10 minutes, or follow the timing recommended for your model. Pat the chickpeas very dry with paper towels or a clean kitchen towel. A salad spinner can help too, though a few chickpeas may escape depending on how yours is built. Pick out and throw away any skins that loosen while you dry them.
- In a bowl, whisk together the oil and spice mix. Add the chickpeas and turn them gently until they are evenly coated.
- Move the chickpeas into the hot air fryer basket and cook for 8 to 10 minutes, until they turn crisp. Taste 1 chickpea; if you want more crunch, cook them for another 1 to 3 minutes. A few may split open as they cook, and that is just fine.
- Tip the chickpeas from the basket into a bowl, taste, and adjust with more salt, pepper, or seasoning if you like. Serve right away, since they will not stay crispy.
