How to Make Crispy Air Fryer French Fries
Air fryer russet fries get a rosemary-salt finish and a crisp edge with just a little oil, no pot of bubbling fat required.

Ingredients
- 1 1/2 pounds russet potatoes
- 2 teaspoons canola oil or other vegetable oil
- 1 tablespoon chopped fresh rosemary or 1 teaspoon dried rosemary
- 1/2 teaspoon fine sea salt, or regular salt
- 1/4 teaspoon freshly cracked black pepper
Directions
- Scrub the potatoes well, then cut them lengthwise into strips 1/4 to 1/2-inch thick. Put the cut potatoes in a bowl of ice water and leave them there for at least an hour, or, if timing is helpful, as long as 24 hours in the fridge.
- Heat the air fryer to 390 degrees F for about 15 minutes.
- Take the potatoes out of the water and spread them over paper towels or a clean kitchen towel. Pat them until they are thoroughly dry, then move them to a medium bowl and toss with the oil, rosemary, salt, and pepper.
- Pull out the air fryer basket and add the potatoes, arranging them as evenly as you can. Cook for 10 minutes.
- Take the basket out and toss the potatoes so they shift around a bit; some pieces may already look more browned than others.
- Return the basket and cook for another 10 to 12 minutes, until the fries look dry and crisp. If any pieces are getting too dark, take those out before continuing.
- Transfer the fries from the air fryer to a serving bowl. Wait a few minutes before tasting, tough as that may be, since they will crisp a bit more as they cool. Add more rosemary, salt, and/or pepper if desired.
- If leftovers somehow happen, refrigerate them covered for a few days. Warm them in a little oil in a hot cast iron pan or skillet, and they will come back nicely.
