CrockPot Sweet and Spicy Ground Turkey and Sweet Potato Stew with Coconut Milk

Ingredients

  • 1 3/4 lbs. lean ground turkey
  • 1 T olive oil, divided
  • 1 small onion, chopped in pieces about 1/2 inch
  • 2 large orange sweet potatoes, peeled and cut into pieces about 1 inch
  • 1/2 cup low-sodium soy sauce, gluten-free if needed
  • 1/2 cup chicken stock
  • 1/3 plus 2 T granulated Monk fruit sweetener
  • 2 T Chili Garlic Sauce
  • 2 tsp. minced ginger
  • 2 tsp. minced garlic
  • 1 can coconut milk
  • 1/2 cup green onions sliced in 1 inch pieces + more thinly sliced green onion for garnish if desired

Directions

  1. Coat the inside of your CrockPot with non-stick spray. A 3.5 quart CrockPot is the size you want here.
  2. Warm 2 tsp. olive oil in a heavy frying pan, then add the ground turkey and brown it well, using your turner to break it into pieces as it cooks. Give this step the full 7-8 minutes it needs; browning is not the place to get impatient. Transfer the browned turkey to the CrockPot.
  3. If the pan looks dry, add 1 tsp. more olive oil, then cook the onions until they’re tender and just lightly browned, about 4-5 minutes. Spoon the onions into the CrockPot with the turkey.
  4. While the turkey and onions are on the stove, peel the sweet potatoes and cut them into pieces about 1 inch square. Add the sweet potatoes to the CrockPot.
  5. In a bowl, stir together the soy sauce, chicken stock, granulated Monk fruit sweetener or sweetener of your choice, Chili Garlic Sauce, minced ginger, and minced garlic. Pour that mixture evenly over everything in the CrockPot.
  6. Cook on HIGH for 2 1/2 to 3 hours, until the sweet potatoes are cooked through and just beginning to break down a bit. You can stir it once or twice along the way if you think of it, but don’t worry if you don’t.
  7. Once the sweet potatoes are done, stir in the can of coconut milk and the green onion pieces. Turn the CrockPot to low and let it cook for 30 minutes more.
  8. Serve hot, over cauliflower rice or Uncle Ben’s Brown Rice if desired, with thinly sliced green onions scattered over the top.
