Ingredients
- 1 mango
- 1 cucumber
- 1/4 cup rice vinegar
- 2 Tbsp white sugar
- 1/8 tsp salt
- 1/8 tsp red pepper flakes
Directions
- Give the cucumber a good scrub so any wax or residue comes off. If you want it to look a little fancy, shave away alternating bands of peel, then cut the cucumber into half-moon slices.
- For the mango, slice off the rounded cheeks first. With a sharp paring knife, make lengthwise cuts through the fruit while keeping the skin intact, then slide a spoon between the peel and the flesh to lift the pieces out. Halve the mango slices so they land closer to the cucumber in size.
- In a small bowl, mix together the rice vinegar, sugar, salt, and red pepper flakes. Keep stirring until the sugar has fully melted into the vinegar.
- Put the cucumber and mango slices in a large bowl, then drizzle the dressing over them. Toss until everything is evenly coated. Serve right away, or chill it until you are ready to eat. Give it a good stir before serving so the dressing finds its way back through the salad.
