Coconut Curry Hummus
A smooth chickpea dip blended with tahini, coconut milk, lime, and curry powder for a bright, savory scoop.
Prep 10 min · Makes about 4 cups

Ingredients
- 2 can chickpeas
- 2 cloves garlic, minced
- 1/4 cup tahini
- 1 lime
- 1.5 Tbsp curry powder
- 1/2 tsp salt
- 1 cup coconut milk
Directions
- Drain and rinse the chickpeas, then tip them into a food processor. Add the garlic and tahini, spoon in 2 Tbsp lime juice and 1/2 tsp lime zest, then add the curry powder, salt, and 1/2 cup coconut milk.
- Put the lid in place and blend until the hummus turns into a smooth paste. Pour in more coconut milk as needed so the mixture has enough liquid to smooth out; 1 cup total is the reference here, but the final amount depends on the consistency of your coconut milk. Give it a taste, then adjust with extra salt, lime, or curry powder as needed.
